Wine Range
With
all our wines, we aim to harvest the fruit
when it has the characteristics that best
suit our interpretation of winemaking. The
farming techniques are conducted in a sustainable
and environmentally responsible manner,
so as to improve the biological health of
the entire vineyard and bushland ecosystem.
We
are committed to offering wines of quality,
purity and integrity.

| SEMILLON
SAUVIGNON BLANC |
The
Semillon and Sauvignon Blanc vines are grown
on the cooler sloping and lower areas of
the property in rich gravelly loam soils
over a clay base.
After
hand picking, both varieties are cold fermented
in stainless steel tanks, with some of the
Semillon fermented in new French oak for
a short time to add complexity to the blend.
The
wine has a slight green, pale straw colour
and great clarity. The nose displays characters
of pink grapefruit and a hint of guava. It
continues on the palate, with balanced citrus
and passionfruit flavours with great length,
clean acid and abundant fruit finish.
Fantastic
drinking now, however the wine will develop
over the next two years.

| SHIRAZ |
Our
Shiraz plantings adjoin our Semillon and
Sauvignon Blanc vines, on the higher side
of the valley, with a touch more morning
and afternoon sunlight, yet a cool easterly
aspect.
As
with all our fruit, the Shiraz grapes
are handpicked. We then use traditional
winemaking techniques, with open fermentation
and hand plunging of the wine. After twelve
months in new and mature French oak, the
wine is racked off lees for natural clarification
before bottling.
This
wine displays a deep, yet clear garnet colour
with the aromas of sweet blackberry, mulberries
and anise. It is complemented on the palate
by fine silky tannins and subtle oak integration,
giving structure and length.
Ready
to drink now, the wine will develop further
complex characters over the next five
years.

| CABERNET
MERLOT |
Our
Cabernet Sauvignon and Merlot vines
are situated at the top end of the estate
with an east-west aspect. This is a
slightly warmer position, receiving
all day sunlight with cool maritime
breezes between the rows.
Both
varieties are fermented separately using
a similar vinification process to the
Shiraz. After secondary fermentation,
the wines are reunited in French oak
barriques for a further twelve months’
maturation.
With
a highly perfumed bouquet of mulberries
and dried wildflowers, the palate is
subtle with abundant dark berry flavours
and mouth-coating tannins.
Young
and happy, this wine will continue to
express itself over the next three to
five years.

| SAUVIGNON
BLANC |
Virgin
BLock's Sauvignon Blanc is grown on the mid to
lower slopes of the property. The vines are grown
on gravelly loam soils, which the variety thrives
on and what the region is reowned for.
After
harvest, the wine is cold fermented in stainless
steel tanks with a small portion spending a little
time in new French oak barrels for some subtle
complexity.
The
wine is bottled in July and is ready to drink
by October and is at its best for up to eighteen
months.
The
aromas of this wine display characters of gooseberries
and nectarines, continuing on the palate with
varietal characteristics of lychees and tropical
fruit.
